Healthy Blueberry Pancakes

Ingredients:

1 cup whole wheat flour, 1 tablespoon baking powder, 1/4 teaspoon salt, 1 teaspoon cinnamon (optional), 1 large egg, 3/4 cup unsweetened almond milk (or any milk of your choice), 1 tablespoon honey or agave nectar (optional), 1 teaspoon vanilla extract, 1 tablespoon coconut oil (or olive oil), 1/2 cup fresh or frozen blueberries (or more:)

Mix ingredients in a bowl, mix dry ingredients in a separate bow and combine the wet and dry ingredients and stir gently, add blueberries. Cook over medium heat and cook lightly grease it with coconut oil or cooking spray. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes until golden brown and cooked through.
