Ingredients:
1 cup vanilla or unflavored protein powder
1/2 cup rolled oats
1/2 cup white chocolate chips or chopped white chocolate
1/4 cup almond butter (or peanut butter)
2 tbsp coconut flour
1-2 tbsp agave nectar or honey (optional)
2 tbsp milk (as needed)
1 tsp vanilla extract (optional)
A pinch of salt
Instructions:
In a separate bowl, mix together dry ingredients
Combine wet ingredients and stir until everything is well combined. The mixture should be thick but if it’s too dry, add a little more milk; if it’s too wet, add a bit more coconut flour or protein powder.
Roll the mixture into small balls (about 1-inch in diameter) with your hands.
Place the truffles in the fridge for at least 30 minutes to set and firm up
In a microwave-safe bowl, melt the white chocolate chips in 20-30 second intervals, stirring in between until fully melted.
Dip each truffle into it, then place them on a parchment-lined tray
*customize with dried fruits, nuts, or a little sprinkle of sea salt for extra flavor
